RECIPE - Filipino Spicy White Chicken & Pork Adobo

THE "OTHER" FILIPINO ADOBO?!? Yes, there's actually many variations! My maternal grandma cooked this frequently when I was a kid and is my actual go to adobo recipe. This has a deeper, more umami-rich flavor over the soy sauce version. It's best eaten with heaps of rice with the sauce poured on top! Here's my version.

HOW TO MAKE

INGREDIENTS

1.5 lb chicken legs & thigh

1.5 lb pork belly, sliced in 1 -1.5 inches in thickness

5 tbsp fish sauce

5 tbsp white vinegar

1.5 tsp ground black pepper

1 whole bulb garlic, minced

3 pcs bay leaf

2 tbsp white sugar

1 tbsp ginger, minced

1-2 birds eye chili, minced (optional)

1/2 cup water, for marinade

1/2-1 whole bulb garlic, for sautéing

2 cups water, for simmering

PROCEDURE

  1. In a bowl, combine everything above except the last. Cover bowl & place in the fridge overnight.

  2. In a dutch oven/pot over medium-high heat, sauté chicken & pork belly until the chicken is no longer pinkish, around 5-6 minutes. Remove chicken from pot and set aside.

  3. With the pork belly left on the pot, pour marinade liquid & simmering water into the pot and make sure pork belly is just about covered. Let liquid boil. Lower heat to low-high/medium then cover pot with lid. Let pot simmer for about 20-25 minutes to tenderize pork belly.

  4. Once pork belly is tenderized according to your liking, put back the half-cooked chicken into the pot and incorporate with the sauce. Let liquid boil and put the lid back to cook the chicken further, around 15-20 minutes.

  5. By this time, most of the sauce should have evaporated and the sauce thickened. For a thicker sauce, remove tender meat from pot & increase heat to let the sauce further reduce. Keep in mind, however, that this is best served with the sauce over the rice.

  6. Once you've achieved the consistency of the sauce and the taste, you are ready to serve over a steaming bowl/plate of rice. Enjoy!
