Vegetable Broth Pho with Meatballs

I was introduced to Vietnamese food in my teens when the American chain Phở HΓ²a first opened shop in Manila in the late 90’s. I truly enjoyed and got hooked on their food, in particular the Phở, the lemongrass chicken/pork and their dry vermicelli rice bowls. Moving to Vancouver, however truly opened my taste buds to even an more authentic and wide-range of Vietnamese dishes. Nonetheless, among all of the Vietnamese foods I’ve tried, i would say that Phở remains one of those dishes I will never get tired of and always come back to. For me, it’s comparable to Taiwanese Beef Noodle Soup and Arroz Caldo of the Philippines. It’s like the Chicken Noodle Soup of Vietnamese cuisine; truly warm and comforting.

Since it’s been rainy, gloomy and a bit chilly here in Vancouver the past few days, my order of vegetable Phở from Herbed Noodle (@herbednoodle) couldn’t have come at the perfect time. I saw their handle while browsing my IG feed and I got curious because their Phở is vegan and vegetable-based. Since I was curious to try how a vegetable based Phở broth compares to the regular kind, I ordered their 2-noodle meal kit, the other noodle being the vegetable broth BΓΊn bΓ² HuαΊΏ with free delivery and $5 off. The kit came with instructions so assembling it was super easy. Since everything was already cooked, all you have to do it put everything together. It took me roughly 15 minutes from start to end. The only thing different I added were the meatballs. Since I am trying to eat more vegetable-based dishes, adding a bit of protein is a good start for me while transitioning to eating more purely vegetable/vegan meals a few times a week.

How does this stack up compared to regular Phở? The vegetable broth was very flavorful and filled with aromatics. I didn’t any add any seasonings to the soup. The noodles were perfectly cooked and the vegetables were fresh. This was comparable to having regular Phở in that you feel fully satiated afterwards, and I don’t mind having this again. However, it’s not something I will crave and come back to anytime soon as compared to regular Phở.
