RECIPE - Creamy Tomato Bacon & Seafood Pasta
I made this creamy, smoky and tangy noodle dish using bacon-wrapped scallops and lobster tails from Intercity Packers Meat & Seafood. HOW TO MAKE
INGREDIENTS
1 tbsp extra virgin olive oil
300-450 g bacon-wrapped scallops, bacon removed and chopped to small pcs; set aside scallops
2 4 oz lobster tails
5-6 cloves garlic, sliced
1 medium shallot, diced
1 600 g can of tomato sauce, regular or with herbs is okay
1 tsp dried tarragon
1 tsp dried oregano
1 cup chicken stock
170 ml heavy cream
450 g pasta of your choice (cooked to package specification), set aside 1 cup of pasta water
1 tsp chili flakes (adjust to your liking)
salt and pepper to taste
PROCEDURE
1. Bring a big pot of water to a boil. Add 1/2 tsp of salt and put lobster tail in, cook for about 2 minutes and remove. Remove meat from shell and chop into bite-sized pieces. Set aside. Save water to cook pasta. See below.
2. In a low-high heat stove, add oil to pan then pan fry scallops until golden brown, about 2-3 minutes per side. Set aside.
3. Using the same pan, saute bacon until it turns golden brown. Remove some of the excess fat.
4. In the same pan, add garlic and shallots, sauteing until sweated, around 3-4 minutes, then add tomato sauce and 1 cup chicken stock. Mix together to incorporate the sauce, then lower heat to medium & let sauce simmer for about 2-3 minutes. Next, add in dried herbs, chili flakes and cream; mix sauce and simmer for another 2-3 minutes. Adjust seasoning at this point.
5. Add cooked pasta to the pan and mix together with the sauce. Add pasta water as well.
6. Add cooked seafood and mix thoroughly until seafood is coated. Turn off heat.
7. Serve with chopped fresh parsley, and enjoy with a glass of white wine.
