FILIPINO FEAST - Pancit Palabok (Rice Noodles in Seafood Gravy) & Pork Longganisa (Cured Sausage)
Two of the Philippines’ most beloved comfort foods, you can’t go wrong with this duo for a weeknight meal or a weekend brunch with friends.
Pancit Palabok is one of my ultimate Filipino soul foods. It always brings me back to a nostalgic time during my childhood when my parents would always order a variation of this dish called Pancit Malabon (referring to a suburb of Greater Manila). I would be so excited to eat it every time they ordered this specialty. It comes in this big, wide, circular woven tray lined with banana leaves and wrapped in a foil packaging and finally, tied like a present with a thin plastic rope. The gravy used in both dishes is the same, but the latter uses thicker noodles and the toppings are a bit different. The noodles in Palabok is very fine.
Pancit Palabok in a nutshell is rice noodles with a seafood gravy. The gravy is full of savory umami flavors derived from a shrimp, smoked fish and fish sauce stock base. The orange color of the sauce comes from annatto seeds, while the sauce is thickened using cornstarch. The sauce is poured on top of cooked rice noodles and finally topped with various ingredients. The toppings vary from household to household, but the most popular are blanched/boiled shrimp, ground pork, boiled eggs, smoked fish flakes (tinapa) and crushed pork rinds. It is finally served by garnishing the dish with green onions and squeezing calamansi (Philippine line) just before eating to give it a tangy flavor.
Longganisa is another staple in any Filipino household. It is cured pork sausage which is generally sweet and savory. Depending on the region of the Philippines, it can either be spicier, sweeter or more garlicky. I personally like my longganisa on the garlicky and peppery side.
I cooked this feast on a tight schedule so these dishes are not made from scratch, although I have my own make from scratch Palabok recipe that I will be featuring on this blog very soon! I can’t wait to share it with all of you :) :) :)
