RECIPE - Fried Chicken Steak with Creamy Mushroom Gravy

Tonight’s feature is one many of us are familiar with. To some, it’s a childhood favourite and brings back lots of fond memories. For many, it truly is comfort food. I dont blame them; this is just a down home, hearty, comforting dish you’ll say yes to eating over and over again. This is Fried Chicken Steak with Mushroom Gravy. I made mashed potatoes & buttered veggies on the side as well to accompany this hefty dish.

The idea came about after watching one of the celebrities I stan, Judy Ann Santos, cook this on her Youtube channel. Her IG page is @judyannskitchen. My mouth was just watering the entire time I watched her make this. From then I knew that I had to make my own version of it! I used her recipe as an outline and altered it according to my preference and the ingredients I had in stock.
HOW TO MAKE
INGREDIENTS
For the chicken coating
3-4 pcs. chicken breast flattened using a meat mallet
1/2 cup all-purpose flour
1/2 cup cornstarch
1 tsp smoked paprika
1 tsp ground onion
1 tsp garlic powder
1 tsp salt
1 tsp ground white pepper
For the mushroom gravy
1/4 - 1/2 cup butter
1/4 cup all-purpose flour
1 tbsp minced garlic
1 tbsp minced shallots
3/4 cup cream (I used half-half; 10% fat)
1 tbsp soy sauce
PROCEDURE
1. Season chicken liberally with salt & pepper. On a big plate, mix all seasonings together as listed above.
2. Prepare & heat frying pan (medium high heat) with enough cooking oil to cover most of the chicken when frying. Use a neutral oil such as Vegetable or Canola oil. I used Canola oil to make this.
3. Just before frying the chicken, dredge it in the seasoning mix, ensuring that the chicken is coated perfectly. Place the chicken in the pan and fry each side until golden brown or crunchy. I fried mine 2x. Remove from pan and place in wire rack to cool.
4. While chicken is frying, take a small sauce pan and melt butter on low high heat. Once butter is melted, add all-purpose flour and mix until it starts to brown and forms a roux. Smell the mixture to make sure that the flour didn’t burn but cooked. Add shallots and garlic, then sauté for about 2-3 minutes until aromatic.
5. Once sauce is aromatic, add cream and mix sauce until sauce thickens. Once sauce thickens, flavour it by adding the soy sauce and ground black pepper. Taste and adjust season to your liking. Add mushrooms then continue to mix until everything incorporates. Let gravy simmer until desired consistency is reached. Turn off heat.
6. Serve with a side of mashed potatoes & buttered veggies.
