Happy Tuesday! I am continuing with the #seafood post today for a change from last week. It was my birthday a couple weeks ago and I happened to receive my annual birthday coupon from a local fish & chips joint in my email inbox. Sadly, I had a tight schedule that day and my hands were tied so I couldn’t find time to redeem this. I had been craving fish & chips for quite some time, so I decided to borrow my mom’s deep fryer to make my own fish & chips over the weekend! I just posted a video of me frying the chips and was going to post on IG stories while making the fish & chips but sadly, I was on a Zoom call with my family when I was making this so I couldn’t use my phone for something else lololol! Having said this, they thoroughly enjoyed my mini cooking show via Zoom and were saying “oohs” and “aahs” so I guess I was making something worthy to eat hahaha…
I used frozen Pollock fish purchased from FreshCo under their Compliments brand and Russett potatoes for the chips. The chips were twice fried. After frying the first time, I placed it in the freezer for a couple days, then re-fried it just before I fried the fish for serving. I highly recommend doing this to your french fries. The outside was super crispy, while the inside was soft. It created the perfect contrast of textures! I enjoyed the fish & chips with a side of tartar sauce and malt vinegar. This was the perfect dinner on a sunny Saturday night while enjoying a glass of beer. Oh, good eats!
